Negroni Prosciutto Red Pepper Rollatini

Staying on the lighter side of things, and wanting to use up some red peppers so we decided to make Prosciutto red pepper rollatini’s. Each one stuffed with Negroni Prosciutto, artichoke hearts, sliced kalamata olives, chopped celery and red onion, tossed in a lemon and olive oil dressing.  Roll this flavorful mixture up in a roasted red pepper slice, and serve along with a nice green salad or It could be served with linguine and some nice Italian bread.

Looks a little like “Italian Sushi” dosen’t it? These easy appetizer roll-ups owe their bite to crisp red pepper.

The recipe below will serve three people or two fairly hungry people. You’ll note that in some cases no specific quantity is listed for the ingredients. With this recipe it is proportion – not precision – that makes it easy to make so get creative with it. When you purchase ingredients you will almost always have more than needed. More is better than less since leftover ingredients can be used in another recipe.

slice(s) (thin) Negroni Prosciutto, diced
3 tablespoon(s) toasted onion mustard, or flavored mustard of choiceFreshly ground black pepper
1 jar marinated artichoke hearts
3 medium red peppers cut into quarters
1 medium red onion
2 tbl lemon juice
2 tbl olive oil
2 ounce(s) mozzarella, cut into (2 x 1/4 inch) strips
1 dozen or so whole kalamata black olives
1/4 cup (s) stalks of celery chopped

Dice Negroni Prosciutto slices on work surface; chop each in half lengthwise then into small bite size pieces.

Spread each red pepper strip with 3/4 teaspoon mustard, generously and sprinkle with pepper.

Place some mozzarella,  Negroni Prosciutto, kalamata olives, artichoke hearts and celery into the quartered red peppers. Roll red pepper up tightly.
Garnish with small frond of celery. Serve immediately, or cover with plastic wrap and refrigerate up to 3 hours. If refrigerated, let stand at room temperature 10 minutes before serving
