Now For Some Authentic Italian Prosciutto Frittata – Aahhhhh!!!

One food some people living out in the country would have had access to was eggs, especially during the spring laying season. One of the best ways to stretch an egg is a frittata, a close relative of the omelet in which the eggs are lightly beaten, poured into the pan with some sort of filler, and cooked until one side is done and the other is firm. The frittata is then flipped with the aid of a pot lid, and cooked until the other side is done too. Quick, easy and very tasty. Frittate can be eaten either hot or cold. Cut into thin wedges then made excellent appetizers. They are slos great picnic foods, and are perfect for light meals, say with a tossed salad.

Ingredients:
5 eggs
1/2 cup milk (better if you have 1/4 cup heavy cream 1/4 cup milk)
3 slices of Negroni Prosciutto or 3 strips of bacon cut into 1/4 inch pieces
Handful of leftover hasbrowns or canned sliced potatoes
1 clove garlic finely chopped
1/4 cup freshly grated parmigiano reggiano
Handful of mozzarella shredded
1 tablespoon olive oil
Fresh basil leaves
Salt & pepper

Preparation:
Oven at 425 F
Heat up a 1/2 tablespoon of olive oil and cook bacon/Negroni Prosciutto/potatoes. Cook until meat is crispy. Then add garlic. Add a pinch of salt.
Scramble eggs with the milk and the parmesan (save some for the topping).
Pour in egg mixture into the skillet. Stir around so that everything is well-distributed.

Top with remaining cheese and basil leaves. Place in oven until bubbly and firm.
